Kugels with Cholents

CAULIFLOWER AND CARROT KUGEL

Purée 1 small cooked cauliflower, and add ½ cup bread crumbs, ¾ cup raisins, 1 Antonovka apple cut into small pieces, 2 tablespoons sliced almonds, ¼ teaspoon almond extract, 2 tablespoons chopped candied orange peel, 3 tablespoons sugar, 5 tablespoons flour, 6 ounces (¾ cup) [melted] butter, 2 eggs, and some salt. Mix everything together well. Meanwhile, cook 4 pounds carrots, slice into little pieces, and lay half of them in a baking dish. Spread the kugel batter over them, and top with remaining carrots. Dot with ½ cup butter, 3 tablespoons sugar, and some salt, and pour on 1 cup milk mixed with 1 tablespoon flour. Cover tightly, and bake 1 hour.
